I’ve been searching for a molasses cookie recipe like the ones from college, and these are close. Thanks to LaDonna for sharing her recipe.

Ingredients

  • 3/4 c shortening
  • 1 c sugar
  • 1 egg
  • 1/4 c molasses
  • 2 c flour
  • 1 t ginger
  • 1 t cinnamon
  • 1/2 t salt
  • 2 t baking soda

Instructions

  1. Cream together shortening and sugar.
  2. Add egg and molasses. Beat well.
  3. Mix dry ingredients and add to creamed mixture.
  4. Roll dough into balls the size of walnuts. (Small scoop)
  5. Roll balls in sugar.
  6. Bake 10 minutes at 350 degrees.

Joe insists that I need to keep trying for the perfect molasses cookie. So if you have a good recipe (must be chewy), and particularly if you remember the cookies from Le Bistro in Ullsvik Center… PLEASE HELP!
