Apple Streusel Bars

Instructions

  1. Crust: Combine flour, sugar, baking powder and salt. Cut in butter until crumbly. Stir in slightly beaten egg yolks. Press half of mixture into ungreased 9x13 pan. Set aside while making filling.
  2. Filling: Combine dry ingredients in large bowl. Add prepared apples and coat well. Arrange over base mixture in pan. Crumble remaining crumb mixture over apples. Carefully brush with slightly beaten egg whites.
  3. Bake in 350 oven 40-45 minutes. Cool.
  4. Icing: combine all ingredients and beat until creamy. Drizzle over cooled bars.

Blueberry Muffin Cake

This cake doesn’t need any icing, and would be perfect for a brunch or tea party. This would be an ideal cake to use those beautiful shaped bundt pans. (Wilton makes some beautiful ones)

  1. Preheat oven to 350’F. Grease (or grease/flour) a 10” tube pan (or bundt pan)
  2. In a small bowl, add blueberries and 2 T cake mix. Toss to coat evenly.
  3. Combine remaining mix, pudding, yogurt, oil, water (if using), cinnamon and eggs until thick and well blended.
  4. Pour about two thirds of the batter into the pan. Sprinkle the blueberries on top, and cover with remaining batter.
  5. Bake until the top is golden brown and it’s pulling away from the sides of the pan. ~45-50 minutes.
  6. Cool in the pan for 10-20 minutes, then invert onto a cooling rack. Invert again so it cools right-side up, and allow to cool completely.
  1. Place cake on serving plate and dust with powdered sugar if desired.

Caramel Corn (Microwave)

  1. Put 3-6 quarts of popped corn in brown paper grocery bag, set aside. Make sure there aren’t any unpopped kernels in the bag.
  2. Combine butter, brown sugar, corn syrup and salt and put in microwave. Boil on high for 2 minutes.
  1. Stir in 1/2 teaspoon soda. Pour caramel over popcorn,close the bag and shake. Put in microwave, cook on high, 1 minute. Shake, cook on high for 1 minute. Shake, spread out on wax paper or cookie sheets to cool.

Crockpot Ribs

Ingredients:

Serves 6.

Preparation:

Trim excess fat from ribs. In a large skillet, brown ribs in oil; transfer to the slow cooker. Place onion slices over the pork ribs.
Combine all remaining ingredients; pour over ribs and onions. Cover and cook on low for 8 to 10 hours.

Gingersnaps (soft)

I’ve been searching for a molasses cookie recipe like the ones from college, and these are close. Thanks to LaDonna for sharing her recipe.

  1. Cream together shortening and sugar.
  2. Add egg and molasses. Beat well.
  3. Mix dry ingredients and add to creamed mixture.
  4. Roll dough into balls the size of walnuts. (Small scoop)
  5. Roll balls in sugar.
  6. Bake 10 minutes at 350 degrees.

Joe insists that I need to keep trying for the perfect molasses cookie. So if you have a good recipe (must be chewy), and particularly if you remember the cookies from Le Bistro in Ullsvik Center… PLEASE HELP!

Macaroni & Cheese

This recipe is from Margee Neis, a friend from church.

  1. Cook macaroni according to package directions. Drain and set aside.
  2. Melt butter in medium saucepan. Add flour and stir over heat until it reaches bubble stage. Add salt & pepper.
  3. Take pan off heat. Add milk.
  4. Over medium heat, stir until thickened.
  5. Gradually add shredded cheese. Stir until melted.
  6. Mix with macaroni.
  7. Pour into 1 1/2 to 2 qt casserole. Mixture will seem soupy.
  8. Bake 30 minutes at 375 degrees.

Variations

Ratatouille

Ingredients

Instructions

  1. Put the eggplant in a colander. Toss it with 1 T salt; let it sit 1 hr. Rinse and dry between paper towels.
  2. Place the oven racks in the middle two positions. Preheat to 500’F. Line two baking sheets with foil.
  3. Toss the eggplant and zucchini with 2T oil; spread on sheets. Sprinkle with salt to taste.
  4. Roast, stirring every 10 minutes, until browned and tender (30-40 min). Rotate pans halfway through. Set aside.
  5. Heat 2T oil over medium heat until shimmery. Add onion. Reduce heat to medium-low and stir frequently until softened and golden brown (15-20 min). Stir in garlic; cook until fragrant (30 sec). Add tomatoes; cook ~5 minutes. Add veggies; stir gently to combine.
  6. Cook until heated through. (Approx 5 minutes). Stir in herbs and adjust with salt & pepper to taste.
  1. Serve hot or warm.

Rhubarb Crunch

This recipe is from Gert Tennies, Joe's grandmother. I never met her, but her desserts are legendary.
    Ingredients Instructions
    1. Mix together everything except rhubarb.
    2. Reserve 1 c mixture for topping, and press the rest into an 8x8 pan. Add rhubarb, and then top with reserved crumb mixture.
    3. Bake at 300'F for 40 minutes or until done.

    Zucchini & Sausage Casserole

    Serves ~4 Time: 30 min prep, 45 min baking

    Instructions

    1. Wash zucchini, trim ends and cut into 1/2” pieces. Cook in boiling water 15 minutes. Drain & chop coarsely.
    2. Brown sausage & onion in skillet. (Drain)
    3. Combine squash, sausage mixture, crumbs, eggs, thyme, salt and 1/4 c cheese.
    4. Put in shallow baking dish. Sprinkle with remaining cheese.
    5. Bake at 350' 40-45 minutes (until brown).

    Instructions

    1. In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.
    2. In a skillet over medium-high heat, brown bacon; drain, set aside.
    3. Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender.
    4. Add sausage and bacon to pot; simmer for 10 minutes.
    5. Add kale and cream to pot; season with salt and pepper; heat through.
